GREEN PEPPER JAM 
2 c. finely ground red and green peppers (seeds removed)
6 1/2 c. sugar
1 1/2 c. apple vinegar
1 bottle Certo

Drain off some juice from peppers. Bring sugar, vinegar and peppers to a hard boil, then set aside where it will keep hot but not boil for 15 to 20 minutes, uncover and stir occasionally.

Bring again to a rolling boil for 2 minutes. Remove from heat and stir in Certo. Skim and stir for 5 minutes. Pour into jars and cover at once with hot paraffin. May take a week to come to a full "set".
