Spinach Salad 
10 oz fresh spinach
12 oz cottage cheese small curd
1/2 c chopped pecan toasted

DRESSING:

1/4 - 1/2 c sugar
3 tbsp vinegar
2 tsp horseradish
1/2 tsp salt
1/2 t ground mustard

Toss spinach, cottage cheese and pecans together. Mix dressing ingredients and layer 1/2 of greens, then 1/2 of dressing. Repeat one more time with rest and serve.
