SALMON PATTIES 
1 can salmon
1/2 c. onion, diced
1/2 c. green olives, chopped
1 egg
2 tbsp. flavored bread crumbs
1 tbsp. lemon juice
2 tbsp. wheat germ
Bread crumbs for coating

Drain and flake salmon, mashing well. Mix all ingredients together, shape into 8 or 9 patties. Pat in bread crumbs to coat both sides. Fry in lightly oiled pan until browned.
