SCAMPI SUPERLATINE 
2 lb. shrimp, cleaned & pressed flat
4 cloves garlic, minced
1/4 c. shallots, minced
1 1/2 sticks butter
2 tbsp. lemon juice
1/2 tsp. soy sauce
1/2 tsp. Worcestershire sauce
1/2 tsp. leaf tarragon
1/4 tsp. Tabasco or hot sauce
2 tbsp. minced parsley

Saute garlic and shallots in butter. Stir in lemon juice, tarragon and hot sauce. Add shrimp. Add Worcestershire sauce. Boil over low heat, turn once. Cook for 7 minutes or until shrimp is done. Sprinkle with parsley. You may serve this over rice or pasta. Serves 4.
