SCOTCH EGGS 
4 hard-boiled eggs
1 lb. sausage mince (divided into 4 parts equally)
1 egg, lightly beaten
Pinch of cayenne pepper
1 c. dried bread crumbs
Oil for deep frying

Shell eggs. Pat out each round of mince. Shape mince around each egg so it covers the whole egg. Roll it in the combined beaten egg and cayenne pepper; then in bread crumbs. Deep fry in oil until golden brown and cooked through (about 3 minutes). Slice eggs in four pieces and serve.
