HAM FRIED RICE 
2 beaten eggs
3 tbsp. oil
1/2 c. diced fully cooked ham
3 tbsp. soy sauce
1 med. onion
4 c. cooked rice
1/2 c. cooked peas

Ensure wok is on high heat. Cook eggs in 1 tablespoon of oil; constantly scrambling into small pieces. Remove from pan. Cook onion until tender, add ham until heated through. Add cooked rice, eggs and peas; heat through. Serve with additional soy sauce. Makes about 4 to 6 servings.
