SPANISH RICE & HAM FRITTATA 
2 c. milk
3/4 c. frozen green peas
1 pkg. (4.5 oz.) 10 minute Spanish rice & sauce mix
4 oz. sliced boiled ham
7 lg. eggs
1/2 c. shredded Cheddar cheese

In 10 inch nonstick skillet bring milk, peas and rice to a boil over high heat. Reduce heat to medium and simmer uncovered approximately 6 minutes until liquid is almost gone.

Meanwhile stack ham and cut in 1/2 inch wide strips. Beat eggs with fork in medium-size bowl just until blended. Add ham and eggs to skillet; cover and stirring once after 2 minutes, cook total of 5 minutes until eggs are almost completely set. Sprinkle with cheese and slice skillet under broiler. If handle isn't broiler proof, leave door open and let handle stick out. Broil 2 minute or until cheese melts and top is lightly browned. Slice out onto platter and cut into wedges to serve or cut in skillet with a wide plastic spatula. Makes 4 servings.
