GRATED SWEET POTATO PUDDING 
3 1/2 cups grated sweet potatoes
4 eggs
1 1/2 cups sugar
1 1/2 cups sweet milk
1 stick melted butter
1 tsp. vanilla

Mix well with spoon in glass or plastic bowl. Pour into 2 large, well-greased and sugared (mix a little sugar and cinnamon together) coated loaf pans or pound cake pan not over 1/2 full. You sprinkle extra cinnamon and sugar mix on the top of batter.

Bake at 325°F for 45 to 60 minutes. Let cool, then enjoy.
