DEEP DISH COCONUT PIE 
4 1/2 c. sugar
1 1/2 sticks butter
1/4 tsp. salt
1 c. flour
7 eggs + 1 yolk
2 c. water
1/4 tsp. vanilla
2 1/4 c. shredded coconut
2 (9") deep dish pie crusts, partially baked

Cream butter and sugar. Add salt and flour; beat well. In another bowl whisk eggs until combined. Add water and whisk again. Add egg mixture slowly to flour mixture beating as you pour. Combine well and add vanilla and coconut and beat until combined. Pour into partially baked shells. Bake 350 degrees for 20 to 30 minutes or until done.
