FRENCH LEMON BARS 
COOKIE CRUST:

3/4 c. butter
1 1/2 c. all-purpose flour
1/3 c. confectioners sugar
1/8 tsp. salt

LEMON FILLING:

3 eggs
1 1/2 c. sugar
3 tbsp. flour
1/3 c. lemon juice

For cookie crust, cut butter into flour, sugar and salt until mixture is crumbly. Press into bottom of 13x9x2" pan. Bake at 350 degrees for 20 minutes. For lemon filling, beat eggs thoroughly in small bowl of electric mixer. Mix sugar and flour, add to eggs, and beat well. Add lemon juice and beat until blended. Pour filling over hot crust, return to oven and bake for 20 minutes. Cool; sprinkle with confectioners sugar. Cut into bars.
