COMPANY ZUCCHINI CASSEROLE 
3 lbs. zucchini, cut up
1 lg. onion, chopped
1 green pepper, chopped
1 can cream of chicken soup
1 c. sour cream
1 c. shredded carrots
2 pkgs. chicken flavored stuffing mix
1 c. melted butter

Cook zucchini, onion and green pepper in a small amount of boiling salted water in saucepan for 10 minutes; drain. Blend soup and sour cream in bowl, fold in cooked vegetables and carrots. Combine stuffing mix.

Spread half the stuffing mixture in 3 quart baking dish. Add vegetables mixture. Top with remaining stuffing mix. Bake at 350 degrees for 25 to 30 minutes. Serves 12.
