QUICK, EASY LEMON COFFEE CAKE 
Yellow cake mix (Duncan Hines)

STREUSEL:

2 tbsp. flour
2 tbsp. sugar
1 tsp. cinnamon
2 tbsp. butter

LEMON FILLING:

1/2 c. sugar
1 1/2 tbsp. cornstarch
Dash salt
3/4 c. water
3 tbsp. lemon juice
1 egg yolk
1 1/2 tsp. butter

Follow directions on cake mix. Bake in 9 inch cake pans.

Mix streusel and put on top of one of the layer cakes. Let cakes cool.

To make filling, put all ingredients in saucepan and stir constantly until thick. Refrigerate for 2 hours and then put filling in between layers, streusel on top and sprinkle top with powdered sugar.
