WESTERN BEEF & RICE CASSEROLE 
1 c. pitted ripe olives
1 lb. ground beef
2 tbsp. oil
1/2 c. chopped onion
1 clove garlic, crushed
1 c. celery
1/4 c. chopped green pepper
1 c. raw rice
2 1/2 c. canned tomatoes
1/2 c. catsup
1 c. water
2 tsp. salt
2 to 3 tsp. chili powder
1/4 tsp. black pepper
1/2 tsp. Worcestershire sauce

1. Preheat oven to moderate (325 degrees).

2. Cut the olives into large pieces.

3. Brown the beef in oil. Remove the meat from the pan and add the onion, garlic, celery, green and rice. Cook, stirring, until browned.

4. Add the tomatoes, water, seasonings, meat, catsup and olives and bring to a boil. Pour into a 2 quart casserole and cover. Bake 45 minutes to 1 hour.
