SAUSAGE-APPLE STUFFED SQUASH | |
3 acorn squash, halved and seeded 1 1/2 lb. pork sausage meat 3/4 c. oatmeal 1/2 tsp. salt 1/2 c. chopped apple 1/4 c. chopped onion 1 tbsp. finely chopped parsley 1/2 c. milk Place squash, cut side down, in a shallow baking pan. Pour a little water in pan. Bake in preheated 350 degree oven about 30 minutes. While squash is baking, make sausage balls. Combine rest of ingredients. Shape into about 18 balls. Brown lightly in a skillet. Remove squash from oven; turn cut side up. Season with salt and pepper. Place 3 balls in center of each squash. Bake 40 minutes longer until squash is tender. |
