SHRIMP FRIED RICE 
2 lbs. shrimp
1 bunch spring onions
5 slices bacon
4 eggs
2 or 3 carrots, cut in strips with potato peeler
Soy sauce
2 c. rice, cooked 2 days ahead

Fry bacon and remove. Break eggs, one at a time and scramble in bacon drippings, remove eggs and saute onion and carrot strips, brown rice and toss all ingredients together with soy sauce to taste.
