UNCLE JIMMY'S RICE PUDDING 
1 c. instant rice directly from box
2 1/2 c. milk
1 tsp. salt
1/4 tsp. cinnamon
1/2 c. sugar
1/4 c. raisins
Egg Beaters
1/2 tsp. vanilla
Nutmeg

Combine in saucepan rice, milk, salt, cinnamon, sugar and raisins. Stir constantly until ingredients reach rolling boil. Reduce heat and boil slowly for 15 minutes stirring occasionally. Slowly pour hot mixture into 1/2 cup of Egg Beaters. Beat vigorously. Add 1/2 teaspoon vanilla. Sprinkle with nutmeg and let cool 10 minutes.
