TURKEY CARCUS SOUP 
1 turkey carcus
4 qts. water
6 sm. potatoes
4 lg. carrots
2 stalks celery
1 lg. onion
1 1/2 c. cabbage
1 7 1/2 oz. can tomatoes (drained and chopped)
1/2 c. rice
1 tsp. worcestershire sauce
1 1/2 tsp. salt
1 tsp. dried parsley flakes
1 tsp. whole basil
1 bay leaf
1 1/4 tsp. pepper
1/4 tsp. paprika
1/4 tsp. poultry seasoning
Pinch whole thyme

Simmer carcus 2 hours. Remove carcus from broth and take meat from bone. Return meat to broth and add remaining ingredients and simmer 1 hour or until vegetables are tender. Remove bay leaf. Makes 5 quarts.
