SWEET-SOUR RED CABBAGE 
3 tbsp. butter
1 small onion, minced
4 tbsp. brown sugar
1 medium head red cabbage, shredded (4 to 5 c.)
3 tart apples, sliced thinly
1/4 c. mild vinegar
salt and pepper to taste

In 3-quart saucepan, melt butter over medium-low heat. Add onion and brown sugar. Cook until a golden yellow. Add remaining ingredients. Cover. Cook on high heat until steaming, then reduce to low heat for 25 to 30 minutes (sometimes takes longer).

Serves 4.
