COCONUT PIE 
1/2 c. butter, melted
2 c. sugar
5 eggs
Pinch of salt
1 c. evaporated milk
1 (3 1/2 oz.) coconut
1 tsp. vanilla
2 deep dish pie shells, unbaked

Cream butter and sugar until light and fluffy. Add salt and eggs, one at a time, beating well after each egg. Stir in milk, coconut and vanilla. Pour in unbaked pie shells. Bake at 350 degrees for 35 to 40 minutes.
