POTATO PANCAKES 
3 c. shredded raw potatoes
1/4 c. onion (grated)
3 tbsp. flour
1 1/4 tsp. salt
2 eggs, beaten
1/4 tsp. pepper

Combine potatoes, onion, salt, pepper and flour. Mix well and add beaten eggs. Spoon 1/4 cup mixture into well greased skillet for each pancake. Spread to make a 3 inch cake. Cook until brown on both sides 8 to 10 minutes. Turn once.
