ORANGE/WATER CHESTNUT SALAD 
4 tbsp. white vinegar
4 tbsp. oil
1/4 tsp. paprika
1/4 tsp. white pepper
1/4 tsp. salt
1 clove garlic, minced
2 tsp. sugar

SALAD:

4 seedless oranges, peeled and cut into sm. chunks
1 med. green pepper, seeded
1 sm. Jicama or 4-6 water chestnuts, sliced (I use canned)

Make dressing; shake well in covered container. Set aside.

Cut peppers into 2 x 1/4 inch pieces. Layer oranges, peppers and water chestnuts or jicamas in bowl; pour dressing over all before serving. Yield 4 servings.
