CHEDDAR CHICKEN 
1 (10 oz.) pkg. frozen chopped broccoli (thawed)
2 whole lg. chicken breasts, skinned, boned and each cut in half
2 tbsp. butter
1/2 lb. Cheddar cheese, shredded
1/3 c. beer
2 tbsp. sliced almonds (optional)

Pat broccoli dry and arrange in an 8x12 inch baking dish; set aside.

Pound each piece of chicken until 1/4 inch thick. In 12 inch skillet over medium-high heat, melt butter and cook chicken until tender and browned on both sides, about 10 minutes. Arrange chicken on broccoli in 1 quart saucepan over low heat.

Heat cheese and beer until cheese is melted and mixture is smooth. Pour cheese over chicken, sprinkle with almonds. Bake at 350 degrees 10-15 minutes. Serves 4.
