CHICKEN SALAD 
1 (3 1/2 lb.) chicken, whole
10 c. stock
1 Red Delicious apple, peeled & diced
2 c. celery
1 tbsp. capers
1/2 c. mayonnaise
2 tbsp. grainy mustard
2 tbsp. Dijon mustard
Lemon juice for apple to keep from browning

Cook chicken in stock until done. Cool, pull off bone in bite size pieces. Add diced apple, celery, capers, mayonnaise and mustards. Toss until well blended. Can serve on lettuce with sliced boiled egg, sliced green peppers, diced tomato.
