GRITS CASSEROLE | |
4 c. water 1 c. quick grits 3 eggs 1 cube butter 1 tsp. salt Dash of garlic salt 3 c. grated cheese 2 cans green chilies, chopped Preheat oven to 350 degrees. In 4 quart saucepan bring 4 cups water to boil. Stir in grits and cook 5 to 7 minutes or until thickened. Melt 1 cube butter in grits. Slightly beat 3 eggs in measuring cup and add enough milk to make 1 cup. Stir egg mixture, grated cheese and chilies into grits. Mix well and pour into greased casserole dish. (Sometimes I use an oblong cake pan and sometimes a round dish.) Bake 35 to 40 minutes or until it seems to be set in the middle. |
