GRITS CASSEROLE 
4 c. water
1 tsp. salt
1 c. hominy grits
1 stick butter
1 roll garlic cheese or jalapeno or cheddar cheese
2 eggs, beaten well
3/4 c. milk

Add salt to water and boil grits until thickened. Add butter and cheese and heat until cheese and butter is melted. Add eggs and milk and mix well. Pour into greased 1 1/2 quart casserole dish. Bake at 350 degrees for 30 minutes. May be prepared and frozen and baked at a later date.
