DATE - NUT CAKE 
1 1/2 lbs. dates
4 c. pecans
4 eggs
1 c. flour
2 tsp. baking powder
1 c. sugar
1 tsp. vanilla
1 tsp. salt

Have nuts as near whole as possible. Cut dates long way into 4 pieces. Sift flour, baking powder, and salt together, then sift over dates and nuts. Sift sugar over this mixture and add the 4 well beaten eggs and yolks to which the vanilla has been added. Beat egg whites stiff and fold into date nut mixture. Bake in loaf pans which have been lined with brown paper that has been greased. Bake at 275 degrees for 1 hour. Makes 2 loaves. To serve, slice thin.
