ROLLED OATMEAL COOKIES 
3 c. oatmeal (regular)
2 1/2 c. white flour
1 tsp. salt
1 tsp. baking soda
1 c. white sugar
1 c. melted lard
1/2 c. sour milk (or buttermilk)
1 tsp. lemon flavoring

Mix all dry ingredients. Add lard, sour milk and flavoring. Roll thin and cut into squares (or diamond shapes) with a knife. Bake in moderate (350 degree) oven until edges are LIGHTLY browned.
