ROLLED OATMEAL COOKIES 
1 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3/4 c. soft shortening
1/2 c. granulated sugar
1 c. brown sugar, packed
2 eggs
3 c. Quaker Oats, quick or old-fashioned

Sift together first 4 ingredients. Add shortening, sugars and eggs. Beat until smooth, about 2 minutes. Stir in oats. Chill dough. Roll to 1/4 inch thick on board sprinkled with confectioners' sugar. Cut with large cookie cutter. Place on greased cookie sheets. Bake at 350 degrees for 8 to 10 minutes. Makes 3 dozen.
