SEASONED CRUMBS | |
1 c. oatmeal 1 c. oat bran 1/4 c. cornmeal 3/4 tsp. ea. of basil, oregano, marjoram, thyme, sage, rosemary or herbs of your choice 2 egg whites Combine dry ingredients and add egg whites. Squeeze mixture together with your hands as well as you can. Some of the mixture will remain dusty and some will form into clumps. Spread on a large cookie sheet and bake 350 degrees for 25 to 30 minutes. Stir every 10 minutes. Mixture is done when it looks slightly yellow and smells toasty. Makes about 2 1/2 cups. Can be used as is; or put in food processor for finer crumbs. As a coating for chicken or fish: Dip food into water, milk or liquid. Shake off excess and coat with crumbs. Spray food with Pam on all sides and place on Pam sprayed baking dish. Bake 400 for 30 minutes for chicken, 15 minutes for fish or until tender. |
