CHEWY OATMEAL COOKIES 
1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
2 cups quick-cooking oats
2 cups cornflakes
1 cup flaked coconut
1 cup salted peanuts

In a mixing bowl, cream butter and sugars. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda, baking powder and salt; gradually add to the creamed mixture Stir in remaining ingredients. Drop by level tablespoonfuls 2-inches apart onto ungreased baking sheets.

Bake at 350°F for 10-12 minutes or until lightly browned. Remove to wire racks to cool.

Yield: about 6-1/2 dozen.
