HONEY SAUTERNE JELLY | |
1 1/2 c. sauterne or other sweet white wine 1/2 of a 1 3/4 oz. pkg. (2 tbsp.) powdered fruit pectin 2 tbsp. lemon juice 2 tsp. finely shredded orange peel 1/2 c. orange juice 3 c. honey In an 8 quart kettle combine sauterne, pectin, lemon juice, orange peel and orange juice. Bring to a full rolling boil. Stir in honey and return to boiling. Boil 5 minutes, stirring constantly. Remove from heat. Skim off foam with a metal spoon. Pour into clean, hot jars; seal at once. Serve with ham, poultry, lamb, or breads and rolls. Makes 4 half-pints. Note: Do not double recipe. If desired, use the remaining pectin and sauterne to make a second batch. |
