HOMEMADE BREAD
Milk
Lard
White sugar
2 tsp. salt
1 pkg. household yeast
Water

Scald 1 cup milk, add 3 rounded tablespoons lard and 2 rounded tablespoons sugar and 2 teaspoon salt. Stir until dissolved. Add 2 cup cold water (to temper). (Heat kills yeast action), 1/4 cup warm water and 1 teaspoon sugar. Crumble in 1 household yeast, dissolve and let stand a few minutes. Combine these 2 mixtures and 1 tablespoon warm lard and 1 tablespoon butter and 1 tablespoon sugar. Blend gently as mush as possible with spoon, then take over with hands and knead. If it is sticky, add a little more flour, work until smooth then put in warm oven to raise. Raise double in size and work down. Raise once more; form into loaf or rolls, brush with butter or dip tops in melted butter for rolls. Let rise until double size. Bake at 300 degrees for 40 minutes. Makes 1 loaf or 18 rolls.
