GREEN LEAF SOUP 
3/4 c. quick cooking barley
4 slices bacon, chopped fine
1 onion, chopped
3 qts. water or chicken or beef broth
2 potatoes, sliced thinly
1 bunch washed, cut prep. leafy greens (spinach, turnip, beet greens, kale)

Fry bacon until crisp, add onion, saute. Add barley and stir over heat until all is mixed. Pour in water or broth. Bring to a boil and skim foam from top. Cook until barley is almost done - 15 to 20 minutes. Add potatoes, leafy greens, and season to taste. Cook until barley and vegetables are done. Garnish with sour cream.
