GREEN PEA SOUP WITH MINT 
1 onion
3 tbsp. butter
2 tbsp. olive oil
3 (10 oz.) pkgs. frozen peas
4 1/2 c. chicken stock or canned broth
1/2 tsp. salt and pepper
2 tsp. chopped fresh mint or 3/4 tsp. dried mint

Chop onion. Melt butter with oil in a saucepan over medium heat. Add onion and cook until soft, about 5 minutes. Add peas, stock, 1 cup water, 1 teaspoon salt and 1/4 teaspoon pepper. Simmer 20-25 minutes. Add mint and puree soup in a blender or food processor in batches if necessary. When ready to serve, simmer until heated through.
