GREEN BEAN SOUP 
2-3 lbs. smoked ham & bone
1 1/2 qts. cold water
2 whole med. onions
2-3 c. fresh cut green beans
1 1/2 c. coarsely grated carrots
Bunch fresh parsley
Sprig fresh summer savory
1/4-1/3 c. sour cream or heavy cream

Combine smoked ham, cold water and whole onions in pot. Boil for 2 hours. Remove ham and onions and strain broth. Add fresh cut green beans, coarsely grated carrots and cubed potatoes to broth. Boil just until tender. Do not overcook. Add parsley and summer savory; boil briefly. Remove herbs from soup. Cut meat from bone and add to soup. Add cream to soup, stir and serve; or, reserve cream to be added to individual soup bowls as served. A refreshing summer soup.
