THREE ONION CASSEROLE 
2 tbsp. butter
2 lg. yellow onions, thinly sliced
2 lg. red onions, thinly sliced
4 med. leeks, rinsed, dried and thinly sliced
Salt and pepper
1 1/2 c. grated Havarti cheese
2 pkgs. (5 oz. each) boursin with herbs, crumbled
1/2 c. grated Gruyere
1/2 c. dry white wine

Preheat oven to 350 degrees. Butter an 8 cup baking dish. Make a layer in the baking dish, use a third each: yellow onions, red onions and leeks. Sprinkle the layers lightly with salt and pepper.

Top with Havarti and make one more layer of onions, leeks, salt and pepper. Top this layer with boursin, layer remaining onions and leeks and top with Gruyere. Dot top with remaining 2 tablespoons butter. Pour wine all over. Bake 1 hour. Cover with aluminum foil if casserole gets brown too fast.
