GAZPACHO 
1/2 c. chopped cucumber
1/2 c. chopped green onion
1/2 c. chopped avocado
1/2 c. chopped bell pepper
1/2 c. chopped celery
4 tbsp. olive oil or salad oil
2 tbsp. wine vinegar
1/2 tsp. crumbled oregano
4 c. tomato juice (very well chilled)
Garlic salt & pepper to taste

Put onion, cucumber, avocado, bell pepper, celery, oil, vinegar, oregano, garlic salt and pepper in a serving bowl. Pour in the tomato juice. Top with cucumber slices; chill. Serve in bowls or mugs as appetizer or substitute for salad.
