BROCCOLI AND RICE CASSEROLE 
1/4 c. melted butter
1 tsp. salt
2 c. grated Mozzarella cheese
2 lg. eggs, beaten
1 1/2 c. milk
2 c. cooked rice
1 (24 oz.) pkg. broccoli spears
1 sm. onion, diced

Mix all ingredients. Put in greased casserole dish. Bake at 350 degrees for 30 to 35 minutes.

Note: Can use grated Velveeta cheese in place of Mozzarella, if so use 1 3/4 cups milk.
