MOM'S PUMPKIN PUDDING 
1 lg. size can pumpkin
3 eggs, beaten and add 3/4 c. sugar
1 lg. can evaporated milk
1/2 tsp. salt
2 tsp. vanilla
2 c. milk
1 scant tsp. cinnamon

Test for sweetness and add more sugar if needed. Bake in 350 degree oven for 45-50 minutes or until center is set. Use large casserole.
