PUFFED POTATOES WITH CHEESE 
1 lg. onion minced
1 tbsp. butter
8 med. potatoes, cooked, drained and mashed
1/3 c. butter
1 1/2 c. grated sharp cheddar cheese
3/4 c. milk
Salt and fresh ground pepper to taste
2 eggs, beaten

Saute onion in 1 tablespoon butter until transparent and tender. Mix mashed potatoes and remaining butter, cheese, milk, salt, pepper and cooked onions and cook over low heat until cheese and butter are melted. Fold in beaten eggs. Turn into greased 2 quart casserole and bake in 375 degree oven until potatoes are puffed and brown. Serve. May be prepared in advance leaving only the baking to be done before serving.
