SPICY SAUSAGE AND POTATOES 
1 1/2 lb. mild Italian sausage, cut into 1 inch pieces
10 sm. new red potatoes, quartered
1/2 tsp. pepper
1/2 tsp. thyme leaves
1 c. sliced 1/8 inch red onions
1/4 c. chopped fresh parsley
1 green pepper, cut into 1 inch pieces

In a 10 inch skillet combine sausage, potatoes, pepper and thyme. Cook over medium high heat, stirring occasionally, until potatoes are browned, 10-12 minutes. Reduce heat to medium low. Cover; cook until potatoes are tender, 8-10 minutes. Stir in remaining ingredients. Continue cooking, uncovered, until vegetables are crisply tender, 4-5 minutes. Makes 6 servings.
