POTATO KIELBASA SALAD | |
2 lb. potatoes 1 lb. fully cooked kielbasa, cut in 1" slices 1 1/2 c. celery 2 c. thinly sliced red cabbage 1/4 c. cider vinegar 2/3 c. bottled herb & garlic or red wine vinegar salad dressing Scrub potatoes. Boil in water until tender. Drain. When cool, cut into 1 inch chunks. Place into large bowl. In large skillet saute kielbasa until lightly browned. Remove with slotted spoon to potatoes in bowl. Saute celery in pan drippings until crisp-tender. Add to potatoes. Add cabbage to skillet and saute 5 minutes. Add vinegar. Cook until cabbage is wilted. Add to potato mixture. Pour salad dressing over potatoes and toss lightly. Serve hot. |
