R.'S BEEF STROGANOFF 
1 1/2 lbs. round steak or sirloin
1 1/2 lbs. sliced mushrooms, fresh or canned
1 c. butter
2 lbs. chopped onions
1 can tomato soup
1 (6 oz.) can tomato paste
1 tsp. salt
1/8 tsp. pepper
1 tsp. soy sauce
1 c. sour cream (to be added before serving)

Cut meat in thin strips, trim off fat and brown in butter with mushrooms and onions. Combine soup, paste and seasonings, then add to meat mixture. Cover and simmer or bake on low for 2 hours. Before serving, add sour cream. Serve over rice.
