ROLLED SUGAR COOKIES 
1 1/2 c. butter
1 1/2 c sugar
2 eggs (or 1 egg and 3 yolks)
2 tsp. lemon extract
1 tsp. vanilla
1 tsp. baking soda in warm water
1/2 tsp. salt
3 1/2 c. flour (or a bit more)

Cream butter and sugar thoroughly, add eggs and cream well again. Add rest of ingredients, mixing well (it is best to add flour slowly). Chill dough in refrigerator for 2 or 3 hours. For best results in rolling, use a mixture of flour and sugar on pastry sheet for very thin cookies. Bake at 375 degrees for 8-10 minutes.
