ROULADIN 
1 1/2 lb. round steak, cut 1/8"-1/4" thick (butcher will cut it)
1 tsp. salt
1/4 tsp. pepper
4 slices bacon
1 c. chopped onion
1/2 c. flour
Prepared mustard
1 c. water

Cut meat in 4 pieces. Brush lightly with mustard and season with salt and pepper. Place one strip bacon on each plus 2 tablespoons onion near end of meat. Fold end and roll, secure with toothpicks, roll in flour and brown slowly in hot shortening. If necessary drain excess fat. Add water and remaining onion. Cover and bake at 325 degrees for 2 hours.

GRAVY: Combine 2 tablespoons flour, 2 tablespoons water, 1 teaspoon mustard and 1/8 teaspoon Worcestershire sauce. Stir into broth. Season.
