COUNTRYSIDE CHICKEN CASSEROLE 
1 pkg. yellow long grain rice
1 med. onion
2 tbsp. butter, melted
1/8 tsp. pepper
2 tsp. parsley flakes
1/4 tsp. salt
3 chicken breasts, cooked & chopped
1 can chicken mushroom soup
2/3 c. mayonnaise
1/4 c. milk

Cook chicken and chop into small pieces. Save broth, cook rice according to package directions. Except use broth instead of water. Omit butter called for in rice. Combine rice and onion, butter and parsley flakes, salt and pepper. Put in casserole dish with chicken on top. Mix soup, milk and mayonnaise. Put this on top of chicken. Bake at 350 degrees for 35 minutes.
