SUNDAY MORNING BRAN MUFFINS 
1 c. sour cream
1/4 c. butter
1 egg, beaten
1 c. bran flakes
1 c. flour
1/3 c. sugar
1 tsp. cinnamon
3/4 tsp. baking soda
1/2 tsp. salt
1 c. chopped apples

Combine sour cream, butter, and egg. Add bran flakes and let stand until softened; add dry ingredients. Mix just until moistened. Fold in apples. Pour into greased muffin pans 3/4 full.

Bake at 400°F for 25 minutes.

Makes 1 dozen.

Have loved made this recipe for years and we love it!! Sometimes I'll add a tiny pinch of ground cloves and/or nutmeg as well. It's a great use for slightly less fresh apples and bran flakes that may have gone a little stale. The batter is usually very dry when mixed - so don't worry this is normal. The added apples will help to keep the muffins moist. Enjoy.
