HAWAIIAN BAKED FISH 
1 lb. fresh fish fillets
1 1/2 c. Minute Rice
1 tbsp. instant minced onion
1 tsp. salt
1 tsp. parsley flakes
1 tbsp. diced pimento
1/2 tsp. curry powder
2 tbsp. lemon juice
2 tbsp. butter
1 1/4 c. pineapple juice

In 8-inch square glass dish combine rice, onion, salt, parsley, pimento, curry powder, lemon juice, and pineapple juice. Arrange fish over rice mixture. Dot butter over top. Cover with Saran. Microwave on HIGH for 10-12 minutes. Let stand for 2 minutes and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
