HERB POTATOES 
1/2 c. butter, melted
2 tbsp. chopped fresh chives
2 tbsp. chopped fresh parsley
1/2 tsp. paprika
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. fine herbs
4 1/2 lb. potatoes, unpeeled and cut into 1/4 inch slices
Grated Parmesan cheese

Combine first 7 ingredients in a large bowl; add potatoes, tossing to coat.

Cover and bake at 425 degrees for 1 hour, stirring at 15 minutes intervals. Top with Parmesan cheese.

Serves 12.
