CREAMY HERBED POTATOES 
1 tsp. butter
2 tbsp. minced onion
2 pared, cooked potatoes, diced
3 tbsp. sour cream
2 tbsp. lowfat milk
1 1/2 tsp. dill and chives
1 tsp. pickle relish
1/8 tsp. salt
Dash of pepper

In 9-inch skillet, melt butter, add onion and saute over medium heat until softened, 1-2 minutes. Add potatoes and saute, stir frequently until heated through, 2-3 minutes.

In small mixing bowl, combine remaining ingredients, pour into skillet and stir well to combine. Cook until mixture thickens and flavors blend, 3-5 minutes.
